Hojicha, which translates to “roasted tea”, owes its unique flavour to the method it is prepared.
Sencha & Bancha tea are roasted in a porcelain pot over charcoal to a scorching temperature of 200°C, then immediately cooled.
In doing so, the leaves develop a greenish-brown appearance & it lowers caffeine & tannin. It also cuts the sharpness of green tea, but expands the drinking experience into a new territory with very distinct & noticeable flavours- a savoury tea with a warm, nutty flavor similar to roasted coffee beans, with virtually no bitterness. It also has a strong distinct aroma that is sweet & slightly caramel-like.
Duration: 3-4 minutes
Temperature: 85C° No thermometer? Bring water to a boil, then cool for 2 minutes.
Amount: 2.5g or 1 tsp per cup
- If you like your tea brewed stronger or weaker, adjust the amount of tea leaves.
- Brewing your tea too long can extract an undesirable bitterness from the leaves
- Loose leaf tea can typically be steeped multiple times. However, each steeping will yield a slightly lighter flavor than the previous.
- To brew in a large teapot, increase the amount of loose leaf tea to match the total cups of water you’re using.
